Cooking with FLBC Beer, Part 1

Many recipes – including soups, main dishes, and even sweets – can all be flavored with beer. Adding your favorite craft beer to a dish can bring a range of flavors, from rich and earthy to sweet and nutty. BEER CHEESE SOUP WITH DOCK START AMBER

1/2 C butter
1 onion
1 C flour
1/2 tsp paprika
1/8 tsp pepper
1/8 tsp cayenne
1 tsp granulated garlic
1 1/2 C heavy whipping cream
3 C milk
2 C Dock Start Amber Ale
1 loaf Velveeta cheese cut in to cubes
1 qt. shredded sharp cheddar cheese
Croutons
Green onions and parsley

 

DIRECTIONS
In soup pot cook onion till tender. Add flour and spices then cook 2 minutes. Slowly stir in cream, milk, and beer then add cheese and let melt. Let simmer on low heat for 1/2 hour, stirring frequently. Garnish with croutons and chopped green onions and parsley.

FLBC ALE FRUIT COBBLER WITH BUFFLEHEAD BROWN

INGREDIENTS
Filling
8 peaches, pears, apples, or any seasonal fruit peeled and diced
¼ C sugar
¼ C brown sugar
¼ tsp cinnamon
1/8 tsp nutmeg
1 tsp lemon juice
2 Tbs Bufflehead Brown Ale
2 tsp cornstarch

Topping
1 C flour
¼ C sugar
¼ C brown sugar
1 tsp baking powder
½ tsp salt
6 Tbs butter
1/8 C boiling water
1/8 C Dock Start Amber Ale
Cinnamon and sugar mix
3 Tbs sugar
1 tsp cinnamon

DIRECTIONS
Heat oven to 425 degrees
Mix fruit, sugar, brown sugar, cinnamon, nutmeg, lemon juice, Bufflehead Brown Ale, and cornstarch.
For the topping…in large bowl mix flour, white sugar, brown sugar, salt, and powder. Add butter and mix with fork until coarse crumbs are formed. Add boiling water then beer and stir till all is combined as a soft batter.
Cook filling in a greased 9×13 pan for 10 minutes. Dollop batter in Tablespoons on top then sprinkle with cinnamon and sugar mix. Bake for 15 minutes.
Serve warm with your favorite ice cream and topping or enjoy on its own!
